Kathy Jensen, MS, RDN

Kathy Jensen brings together a unique variety of skills and expertise that spans over 50 years. She has a master’s in Food Science and Nutrition with a depth of nutritional experience as a Registered Dietitian ranging from infants to the elderly, small scale cooking to commercial production kitchen management serving over 4,700 meals/day. Her scope of experience extends into 15.5 years of clinical and administrative dietetics for a forensic mental health hospital, and consultant for CACFP child and adult food service operations. She has provided extensive nutrition education, food safety and diabetes education for the public.
She is a member of Dietitians in Integrative and Functional Medicine, which is a specialty practice group of nutrition practitioners whose core philosophy centers around a holistic personalized approach to health and healing.
Completing the Master Gardener coursework and volunteer hours through the Colorado State University Extension Service, Kathy has been a passionate grower of a variety of plants, especially flowers. Co-owning a hemp farm became a great opportunity to expand her knowledge into the world of cannabis and hemp. It was a natural evolution to focus on the use of cannabis and CBD products for palliative and hospice patients and later direct her interest to the prevention benefits of the cannabis plants. She is also actively involved as a consultant in sales and marketing of cannabis products and helping hemp farmers get their products to market.
Starting out in Sales for Exxon Office Systems back in the late 1970’s her career in sales and marketing continued to grow in experience, training and productivity to Vice President of Sales and Marketing Support Systems for Health Systems International, a public company with sales of $1.96 billion and 2,367 employees.
Kathy is certified in a variety of sales training programs for management and sales staff, a certified Myers-Briggs Type Indicator instructor, Chief Training Officer Training, Criterion-Referenced Instructional Design, and facilitates Mergers, Acquisition and Conflict Management training programs. She has worked closely with Tom Crum, in his programs, “The Magic of Conflict.”
